From a market stall to Franklin Ave.

Hi, we’re Nina and Theo.
We started Morning Kiln in 2019 with one oven, a folding table and forty loaves at the Grand Army Plaza market. They sold out by ten, every Saturday, for two years.
In 2021 we found an old laundromat on Franklin Avenue with a long window and a big back room. Theo built the bench, Nina built the starter (her name is Doris), and the neighbourhood kept coming.
Today there are eleven of us. We still bake everything here, still sell out most days, and still think the best bread is the one you eat on the walk home.
The short version.
The market stall
Forty loaves every Saturday at Grand Army Plaza.
Franklin Avenue
The bakery opens in a former laundromat.
The coffee bar
Espresso, chai and a window seat for eight.
Order ahead
Order tonight, pick up at 7am.
Local flour
Four flours from two New York farms, milled within 200 miles of the oven.
Slow on purpose
Long ferments make bread that tastes better and keeps longer. No shortcuts.
Nothing wasted
Day-old bread goes to the Crown Heights community fridge every evening.
We’re hiring a morning baker.
4 days a week, 3am to 11am. Benefits, a free loaf every shift and a team that likes each other.
